Cold Days

POACHED EGGS WITH RICE AND SATAY SAUCE
It has been bitterly cold here raining almost every day. So difficult to get anything done. Nothing slows the weeds and if I don't start to get on top of them we won't be able to find the backyard when the spring flush hits. I managed to spend about an hour outside today doing some weeding and a little pruning. It is certainly difficult to decide where to start as there is so much to do. The broad beans I planted in the potato garden have come up and I need to weed and plant the rest of the bed, Roses and fruit trees to be pruned still. A few jobs each day, at least that is the plan!
This is a good way to use up leftover cooked rice and make a delicious quick meal.

Poached Eggs with Rice, Fried Onion and Satay Sauce

Cooked rice
4 eggs
1 large onion
coriander leaves
satay sauce

Method
Slice onion and fry in a small amount of olive oil in a nonstick pan over a low heat until soft and golden brown. Poach eggs, reheat the rice. Place the rice in serving bowls, top with poached eggs, then onion, pour over the satay sauce and garnish with fresh coriander leaves.
Serves 2
