A Well Deserved Afternoon Tea

yo-yos
Well I did not make these from produce that I grew. But I did enjoy eating them out in the garden for afternoon tea. A wonderful break from weeding. They look too pretty not to share. Plus there won't be any left tomorrow!

Yo-Yo Biscuits
1 cup self raising flour
½ cup custard powder
1/3 cup icing sugar
185 grams butter

Butter Icing
½ cup icing sugar
2 tablespoons butter
Few drops red food colouring
2 teaspoons milk

Method
Cream together the butter and icing sugar till pale and fluffy, beat in the custard powder.
Mix in the sifted flour to and work into stiff dough.
Roll into balls, approximately 1 teaspoon in each and place on an oven tray. Using a fork, flatten each ball a little.
Bake in a preheated oven 180c approximately 15 to 20 minutes until a light faun colour.
Cool on a cake cooler and join together with butter icing.

To make the icing
Cream the butter and slowly add the sifted icing sugar.
Add the food colouring and milk to form a light and fluffy icing.
