Balsamic Baked Potatoes and Red Onions


In Jamie Oliver’s book ‘Jamie at Home Cook Your Way to the Good Life’ on page 150 there is a recipe for Balsamic baked potatoes and red onions. Jamie describes the dish as crispy, dark, sticky and sweet.
I have made this delicious recipe a few times now and they are turning into a favorite.

BALSAMIC BAKED POTATOES AND RED ONIONS

1.5kg waxy potatoes peeled and cut into large wedges,
Sea salt
Freshly ground black pepper
200g butter
Olive oil
Bunch fresh rosemary leaves chopped, or you can use thyme
1 whole bulb garlic quartered
5 medium red onions peeled and quarter
350 ml cheap balsamic vinegar

METHOD

Put the potatoes in a pan of salted water and simmer for around 8 minutes, drain and return to the pan shaking them to gently break them up. Place a large roasting dish on the top of the stove, when hot add a good glug of olive oil, add the butter, herbs and garlic. Add the potatoes and toss them in the flavors, add the onions and balsamic vinegar, season with salt and pepper. Cook on the top of the stove for around 5 minutes to reduce the balsamic vinegar a little. Place the tray on the top shelf of the oven and cook for around 50 minutes until the potatoes and onions are dark, sticky and crispy- removing the tray about half way through the cooking time to turn and baste the onions and potatoes.
