Chocolate, Pistachio and Cranberry Slice

 I have never been fond of the chocolate that they make Easter eggs from, hence the fact that even as a child I rarely ate mine. They could be found in the fridge until Mum finally threw them out. Coen's father is a complete chocolate addict and needless to say Coen as a child over indulged in a big way! So Easter presents from Mum was always a very low chocolate affair. A gift of something that was a treat and practical was more the order of my house. I do have some good memories of some fun Easter egg hunts when Coen was very young. There was lots of screams and laughter from over the fence on Sunday morning as my neighbours and their small grandchildren held their own Easter egg hunt. Not certain who had the most fun, but I somehow thing it was the grandparents!
So this is what Coen received this year instead of an Easter egg, and far nicer!
 
Chocolate, Pistachio and Cranberry Slice  
350g good quality dark chocolate chopped
3/4 cup sweetened condensed milk
2 teaspoons vanilla extract
1/4 cup icing sugar
1 cup dried cranberries
3/4 cup shelled unsalted pistachio nuts
Method
Line a 16 x 5cm loaf tin with baking paper
Melt the chocolate and add the sweetened condensed milk, stir until combined. Add the vanilla, icing sugar, cranberries and pistachio nuts. Press the mixture firmly into the loaf tin. Chill until set. Remove from tin and slice, store in an airtight container in a cool place. The slice should keep for several weeks, but it won't last that long around here!
