Lemon Syrup


It feels like a week of 'what do do with the lemons' A large part of keeping a kitchen garden and cooking from the produce is being able to share with family and friends. I am not fond of cordials that have citric acid in them and I like the store bought ones even less. Homemade lemon syrup can be used as a cordial and it is handy to have some on hand.

Lemon Syrup
1 cup water
1 cup sugar
1 cup lemon juice strained

Method
Combine the sugar and water and cook until reduced by about 1 third. Take off the heat and stir in the lemon juice.
The syrup will keep in the fridge for a few weeks but if you would like to make a larger batch you can preserve it by putting it in jars and boiling them in a water bath for about 8 minutes to seal them.
Very handy for summer holidays to make up jugs of lemonade with ice and fresh mint to have on hand in the fridge in hot weather.  

I should make up a few jars now to give away at Christmas.
